Kofta curry

Ingredients:

Koftas
  • 1 Kg Mince
  • 1 Medium onion
  • 2 to 3 green chillies
  • 4 garlic cloves
  • Medium sized ginger
  • 2 tsp mixed spice
  • Handful of coriander
  • Handful of mint
  • 3 tbs bread crumbs
Curry
  • 1 Medium onion
  • Curry leaves
  • Cinnamon stick
  • 5-6 cloves
  • 2 tomatoes
  • Handful of coriander
  • Handful of mint
  • Heaped tbsp ginger and garlic
  • 2 heaped tbsp indian curry powder
  • 1 tbsp cumin
  • 1 tbsp coriander powder
  • 1 tbsp chili powder
  • Paprika
  • 2 large ppotatoes
  • 200ml coconut milk
  • 1/2 lemon juice
Chop med to large onion with curry leaves, Cinnamon stick and about 5 to 6 cloves, fry well until golden, add 2 tomato finely chopped with extra coriander and mint also finely chopped, then add a heaped tablespoon of ginger and garlic and keep frying, then add 2 heaped tablespoons of Indian Curry Powder, 1tbsp cumin and coriander powder and chilli pwd. to suite the hotness that you like. Add paprika to give the rich red colour,when oil comes to the surface add enough hot water to cover the balls, add the balls, turn the stove on very low, put lid on and let it simmer. Boil potatoes in microwave, when the balls are cooked and the gravy is fairly thick, add 1/2 tin coconut milk, when it starts to buble after about 10 mins add the potatoes and cook a few mins longer add salt to taste. Before serving add half a lemon and gently stir. Serve with yellow rice. and poppadoms.

Yellow rice
  • 2 cups basmatti rice
  • 400ml coconut milk
  • 1/2 carton chicken stock
  • Curry leaves
  • 1 Cinnamon stick
  • 4 cloves
  • 4 cardamom pods
  • 2 tbsp ghee
  • Water to cover rice
